Slow Simmering in Summer: A Craving-Worthy Crockpot Beef Stew

It may be 90 degrees outside – hot, humid, and clinging – but that didn’t stop me from pulling out the crockpot and making a hearty beef stew. Sometimes, you just crave what you crave. And this? This hit every spot.

It’s amazing how different this little one growing inside me has been when it comes to cravings. With my oldest, I couldn’t get enough of anything spicy or peppery. But with this baby, it’s all about comfort food – meals that feel rooted in heritage, like the cozy dishes from English or Irish kitchens… or even a simple, creamy homemade mac and cheese.

This beef stew came together quickly and easily – just the kind of meal a busy, nesting mama (and her hungry family) can appreciate. It’s also wonderfully kid-approved, which makes it a win all around.

Ingredients:

  • 1 lb stew beef (cut into 1-inch chunks)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 2 medium potatoes (cut into 1-inch chunks)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2½ cups beef broth
  • 8 oz tomato paste
  • 1 tbsp Italian seasoning

Instructions:

  1. Combine all ingredients in your crockpot.
  2. Set to low for 8–10 hours or high for 5–6 hours.
  3. Serve with warm, crusty bread and enjoy!

I absolutely loved this meal – simple to prep, easy to forget about until dinnertime, and oh-so-satisfying for both me and baby. There’s something magical about cooking in a way that honors what your body is truly craving.

Seasonal cooking is beautiful, don’t get me wrong – but sometimes, a traditionally “fall” or “winter” dish belongs right on your summer table, especially when it brings comfort, warmth, and full bellies all around.
