It’s no secret that autumn is my favorite season – I’ve probably said it a thousand times already, but I’ll never stop embracing and cherishing every part of it.
This year, our single apple tree has blessed us with so much abundance. We’ve eaten apples straight from the branches, turned them into applesauce, baked them into chips, and folded them into recipe after recipe. But as the golden light filters through the few apples still clinging to the tree, I wanted to try something new – something that captured the essence of the season.
So today, I made a Golden Harvest Chicken & Apple Stew. It’s a dish that feels both comforting and celebratory, sweetened by the seasonal abundance we gathered as a family.

Ingredients:
- 2–3 chicken breasts or thighs
- 2 apples (peeled and chopped)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 1 small onion (chopped)
- ½ tsp cinnamon
- ½ tsp sage
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp apple cider vinegar or lemon juice
- 2 cups chicken broth
Instructions:
1. Add all ingredients to your crockpot.
2. Cook on low for 6–7 hours or high for 3–4 hours.
3. Shred the chicken before serving.
4. Enjoy with warm, crusty sourdough bread.
This stew turned out so delicious – and so simple. The blend of flavors was both sweet and savory, filling enough to satisfy the whole family while still carrying the lightness of seasonal harvest cooking.
Moments like these remind me how special it is to gather as a family, create together, and savor the gifts of the season.
